Tomatillo peppers (about 1 LB), also known as the Mexican husk tomato, are small, round fruits resembling little tomatoes bearing a papery outer covering. They are members of the nightshade family, along with tomatoes, potatoes, and peppers. Though they are usually green, they can ripen to be any number of other colors, including yellow, purple, and red. Tomatillos are a very good source of dietary fiber, niacin, potassium, and manganese. They contain 20 percent of the daily recommended value in vitamin C, 13 percent of the vitamin K, and a healthy amount of iron, magnesium, phosphorus, and copper.
To make salsa verde, add the whole Tomatillos (husks removed and rinsed) and boil for approximately 5 minutes or until soft. Drain and crush or puree, then add your favorite spices & seasonings. Tomatillos are great when fire roasted, which can be done under the broiler, with a propane torch, or over an open flame such as a grill. Make sure the heat is quite hot before roasting.
