The New York is a strip steak from the short loin, located next to the top of the tenderloin. These incredibly juicy steaks are cut from the heart of the loin. They're boneless, evenly marbled, with a sweet, yet robust flavor and make for precise even grilling throughout. These New York Strip steaks are California grown and USDA Prime. This cut is often the crown jewel of all steaks and has the most marbling and fat content for maximum flavor profile. It tends to be very juicy, rich in flavor, and delicious! Prime meats are reserved for premium steak houses or 5 star restaurants and hotels. USDA Prime is the highest grade of 3 (select, choice, prime), less than 2% of beef earns a Prime grading.
