The Jewel yam, commonly known as mountain yam, is a sweet yam variety. This is very similar to sweet potato, but of a lighter flesh and skin color. The nutritional value of the yam is principally as a source of carbohydrates, though if eaten in large quantities it can provide a substantial amount of protein, thiamine and vitamin C.
