Veggie Tofu Curry with Kitchen Table App

Stella Cheung's Veggie Tofu Curry 

Serves: 4-6

Prep time: 10-15 minutes

Cook time: 30-45 minutes

INGREDIENTS:

(For Part 1)

(For Part 2)

  • 1 bunch baby bok choy
  • 1 head of cauliflower
  • 1 bunch kale
  • 2-lbs tofu (strain the water out ahead of time)
  • 2 TBS cumin powder
  • 2 TBS coriander powder
  • 2 TBS curry powder
  • 3 TBS shredded coconut
  • 4-5 cups veggie broth or water
  • 2 TBS salt or 1 TBS Braggs amino acids

(For Part 3)

DIRECTIONS:

(Part 1)

  1. Chop carrot and celery into 1/4 inch slices
  2. Dice the garlic
  3. Heat up a pot (big enough to hold all the vegetables later) with coconut oil or grape seed oil on medium heat.
  4. Add the cumin, coriander, mustard seeds, and bay leaves and allow the spices to slowly heat up. Watch out the mustard seeds might start popping!
  5. Once the spices are heated (you’ll start to smell the aroma) add the garlic, ginger, and tumeric
  6. Continue stirring all the spices and ingredients together and let it simmer on low heat

(Part 2)

  1. Turn the heat up to medium-high and add all the veggies (chop all the veggies into edible pieces ahead of time) and allow the veggies time to cook half way
  2. Stir in the tofu (cut the tofu into 1/2 inch cubes ahead of time)
  3. Add 4-5 cups of broth or water and allow it come to a boil
  4. Once it starts to boil, stir in the cumin, coriander, curry powder, and shredded coconut
  5. Bring everything down to a simmer and allow all the flavors to cook into each other...add the salt or braggs amino acids for added flavor
  6. Put the lid on and all everything to cook on a low heat for another 15-20 minutes...keep checking the liquid level and add more h2o or broth if needed

(Part 3)

  1. Serve over brown rice or your favorite pasta and garnish with fresh cilantro and/or green onions

Stella is such a wonderful host! I recently went to Stella’s Kitchen Table evening that began with a group meditation and ended with a hot cup of her homemade turmeric tea. Stella welcomed us all into her space, led us through a mindful meditation, and introduced us to Ayurveda and the principles around the mind and the body being inextricably connected and the power of food depending on everyone’s individual body type. We all shared in a delicious meal and friendly conversation together. Already looking forward to going back!
