1. Easier Digestion - sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast. Lactobacillus is a probiotic that helps the body absorb nutrients and acts as good bacteria to keep your gut healthy. This may help with diarrhea, IBS or lactose intolerance!
2. Decreases phytic acid production - the presence of Lactobacillus decreases the amount of phytic acid production. Phytic acid binds to minerals such as magnesium, calcium, iron and zinc - which makes these minerals unavailable for us if present. The long fermentation process is what decreases the phytic acid.
3. Packed with vitamins - in addition to increased digestion, sourdough is also packed with many vitamins and minerals like other whole grain breads. Sourdough bread also contains higher levels of antioxidants and folate than other breads. The lower phytate levels allow your bodies to absorb the nutrients more easily.
