Roli Roti Organic Bone Broths
Thomas Odermatt, a third generation “Metzgermeister” (master butcher) is the “Butcher” behind Butcher’s Bone Broth. Growing up in his family’s butcher shop right outside of Zurich, Switzerland, Thomas learned the craft of European butchery from a very young age, and eventually brought that expertise and passion to the States.
Since 2003, Thomas has owned and operated one of the Bay Area’s most popular food trucks, Roli Roti Gourmet Rotisserie. Every day, a fleet of Roli Roti trucks serves perfectly cooked meats to eaters all over the Bay, beloved for its rotisserie chickens and porchetta sandwiches. In wanting to feed and nourish people even further, Butcher’s Bone Broth was born. Thomas takes the same approach with his broth as he does the meats for Roli Roti: preparing everything simply, but perfectly.
As the only organic fresh bone broth on the market, Butcher’s is beloved for its deeply rich flavor, naturally gelatinous texture, and for being just as nutritious as it is delicious.
Every bottle of Butcher’s Bone Broth is gluten free and made the same way. Bones are slow-roasted to perfection, creating deep layers of flavor. Next, fresh organic vegetables are added, and together, they simmer for 24 hours. That’s it—no added salt or preservatives. The result is a naturally thick, rich, and nutritious broth that you can cook with or simply enjoy on its own.
Great Things about Roti Roli's Bone Broth
Always fresh, never frozen—they are the only organic bone broth on the market sold in this way (and sold in an award-winning bottle design!)
- Their broth is perfect for that as you don’t need to defrost it and it is ready to serve in minutes
- Many brands are also antiseptic/tetrapacked, meaning a lot of the great nutritional content is stripped away in the processing of the broth to achieve shelf stability. Ours is not. A good bone broth should be jiggly and jello-like before heated, not pourable straight out of the box.
- By also being sold fresh and not freezing it, they preserve the broth’s nutritional integrity and its depth of flavor and texture. They liken it to freezing milk, which many would prefer not to do.
Their broth is just three ingredients: organic bones, organic carrots, and water; it has no added salt and no alliums or flavorings/preservatives, meaning it’s not only easy to cook with, but also compliant with just about any specialty diet including keto and paleo.
Their broth also has up to 22% daily value of protein with less than 50 calories.. It’s a great way to get a ton of protein with low calories, and is especially helpful for those on the Keto diet, where fasting is quite popular (and bone broth is an approved food item during a Keto fast). It’s also getting a lot of traction with athletes looking for a post-workout alternative to a heavy protein shake.
