Rainbow Quinoa Salad
Taste the rainbow with this beautiful rainbow quinoa salad! This recipe is easy to put together and creates a beautiful presentation for you or your guests!
- Put quinoa and water in a pot and bring to a boil. After it comes to a boil, reduce heat to low and let simmer for 10 minutes. After 10 minutes, let rest for five minutes before fluffing with a fork.
- While quinoa is cooking, dice the sweet peppers and cucumbers into small pieces and chop the kale and grape tomatoes.
- Take the fluffed quinoa out of the pot and transfer to serving bowl. Mix in olive oil, lemon juice, pinch of cumin, and season with salt and pepper to taste. Add the chopped veggies into the quinoa and mix. Top with protein of choice. I would recommend a salmon or chicken. If you're vegetarian, an egg is perfect. Subbing in black beans would make an excellent vegan salad.
