Quick Breakfast Idea: Papaya Yogurt Boats

If you're like me, breakfast is a daily ritual. The thought of breakfast gets me off my bed in the morning! Scrambled eggs, waffles, cereal bowls, avocado toast, yogurt bowls, granola parfaits, fresh fruit and the list goes on. I enjoy creating new ideas and combinations. Some days I crave savory, other times, sweet. Here is a quick 5 minute breakfast recipe - papaya boats filled with yogurt, granola, peanut butter & superfoods. You have your carbs, protein and healthy fats all stuff in this one papaya. This combination will definitely leave you feeling satisfied and refreshed in the morning!

Papaya Benefits 
Papaya is a great source of fiber as well as antioxidant nutrients such as flavonoids, carotenes, vitamin C and vitamin B. These nutrients may help improve cardiovascular health and protect against certain diseases. Papaya also contains papain, which is an enzyme to help digest proteins, aiding in digestion. Papain is more concentrated in unripe papayas. 

Ingredients: 

  • 1 medium Papaya
  • 1/2 cup Kite Hill Plain Yogurt
  • 2 tbsp Justin's Peanut Butter
  • 1/2 cup Kesson's Sprouted Granola
  • Toppings of choice (I added chia seeds + coconut flakes) 
  •  
    Directions:
    1. Cut papaya in half and remove the seeds. 
    2. Scoop 1/2 cup yogurt by small spoonfuls into papaya boat.
    3. Top with granola, drizzle of peanut butter and your toppings of choice! 

    Enjoy it as a quick breakfast or even as a mid-day snack. The natural sweetness of the papaya, creaminess of yogurt & crunch of granola will ignite your tastebuds for sure and leave you craving for more!
