Looking for a healthier snack option for your workday or Super Bowl party? These kale chips are kicked up a notch by adding in miso! 

Miso is full of essential minerals and a good source of vitamins B, E, K, and folic acid. Since it is a fermented food, miso provides the gut with beneficial bacteria that help us to stay healthy and happy. 


  • 12oz of curly kale or swiss chard, stemmed and torn into bite sized pieces
  • 2 tbsp extra virgin olive oil
  • 1/4 cup white miso 
  • 3/4 cups raw cashews
  • 1 tbsp light soy sauce
  • 3 cloves garlic

Note: Nuts can be removed for allergies and can be modified for low sodium diets.


  1. Prepare kale by pulling leaves from rib/stems and tearing into pieces. Wash and dry in a salad spinner or using cloth/paper towels
  2. Mix miso, cashews, soy sauce, garlic and olive oil in food processor until smooth
  3. In a large bowl gently massage cashew miso mixture into kale pieces until well coated 
  4. Transfer to a mesh liner and bake at 125F for 8 hours or until kale and coating is crispy. For a quick recipe bake at 350F for 8-12 minutes or until kale begins to brown and crispy
