Eggs Royale (Smoked Salmon Eggs Benedict)

Ready to try a different type of Eggs Benedict? This twist on the original recipe will have you feeling like royalty in no time.  
                                                                                              
PORTION: 1 serving
PREPARATION TIME: 30 minutes
INGREDIENTS:
DIRECTIONS FOR HOLLANDAISE SAUCE:
  1. Whisk the egg yolks and lemon juice together in a steel bowl.
  2. Place the bowl intermittently over a saucepan containing barely simmering water.  Important Note: The water should never touch the bottom of the bowl and do not let the eggs get too hot.
  3. Continue to whisk rapidly and add in the melted butter and continue to whisk until the sauce is thickened
  4. Remove from heat, whisk in sea salt and 1/2 teaspoon of cornstarch.
  5. Cover and place in a warm spot until ready to serve.
DIRECTIONS FOR EGGS BENEDICT:
  1. Gently break 1 of the eggs into the boiling water taking care not to break it.
  2. Reduce the heat to a gentle simmer.
  3. Cook until the egg white is set and yolk remains soft.
  4. Remove with a slotted spoon, allowing the egg to drain.
  5. Toast the English Muffin and place in you favorite plate.
  6. Add the avocado slices, smoked salmon, and the poached egg.
  7. Spoon the hollandaise sauce over the poached egg.
  8. Garnish with sprouts, chives, and cherry tomatoes.
