Easy & Simple Ahi Tuna Poke Bowls

Put together this simple ahi tuna poke bowl for you and a friend in just an hour! This is the perfect meal when you have a guest over for a lunch date! We hope you enjoy.

Ingredients:

  • 2 6 oz ahi tuna
  • 1 cucumber
  • 1 avocado
  • 2 cups mixed greens
  • 1 cup sushi rice 
  • 1/2 cup sliced green onions
  • 2 tsp rice vinegar 
  • 1 tsp sugar 
  • 1 tsp salt
  • 1/2 tsp black sesame seeds
  • 1/2 tsp white sesame seeds
  • 2 tsp sesame oil
  • 2 tsp soy sauce 
Directions: 
  1. Start by making your rice first according to the package instructions. You can use a pot over the fire or a slow cooker, also you can use risotto rice, jasmine or sushi rice, up to you! We used risotto rice. When rice is done, mix in 2 tsp rice vinegar, 1 tsp sugar and 1 tsp salt. 
  2. Prep your veggies: slice your cucumbers, cube avocado, finely chop your green onions and wash your mixed greens. 
  3. Cube your ahi and set aside. 
  4. Start to assemble your mixture, ahi, cubed avocado, green onion, sesame oil, soy sauce and salt, mix all those components in a bowl. 
  5. Create your bowl! Greens first, rice, ahi poke mixture, a side of sliced cucumber and top with black sesame seeds.
