Time: 35-45 mins

Yields: 3-4 servings

Ingredients:
Directions:
  1. First start making your sushi rice how it shows on the box directions, when it's done add in your rice wine vinegar, salt and sugar. Set aside.
  2. Prep your ingredients. Chop your cucumber, onions and carrots thinly. Cube your mango.
  3. Cube your ahi tuna and mix with sesame oil, sesame seeds, soy sauce, Sriracha, chopped chives, less than 1/2 chopped white onion and let the flavors soak for about 5-10 minutes!
  4. Make your spicy mayo: mix sesame oil, lemon juice mayo and Sriracha.
  5. You are ready to assemble! Place on your sushi rice first. Tip: put a little bit of water on your fingers so the sticky rice doesn't stick to your fingers and you can easily put it on the seaweed.
  6. Place on your Ahi, cucumber, tomato, onion, mango and cilantro and chives for some freshness. Top with spicy mayo and roll up into a cone. To make the cone, go towards the corner where you put the rice and start to roll it.
  7. Dip in soy sauce and more spicy mayo, enjoy!
