Yasmin’s parents taught her this recipe that they first found in the pages of Gourmet magazine (back when it was still in print) and have adopted it over the years to make it their own.  See the full recipe below:

1 1/4 organic chick peas (soaked overnight!)

2 organic garlic cloves

3/4 of a cup of organic chopped yellow onion

3/4 of a cup of organic fresh cilantro

1/4 cup of organic fresh, flat leaf parsley

1 tsp of pink salt

3/4 tsp cumin

1/2 tsp coriander

1/2 tsp of black pepper

1/2 tsp of baking soda

1/4 tsp of cayenne

organic canola oil

Add all ingredients (excluding the oil) into food processor and blend about one and half minutes. Decant falafel mixture into a glass dish and create a nice even layer (not super thin) and dry out mixture for about an hour (don't cover the glass dish!). Good to have a thermometer to get oil to about 340 degrees before dropping in balls of falafel mixture. Hope your mouth is watering, because now it's time to enjoy.

Yasmin:

I love this recipe because it’s fried, but still kind of healthy, best of both worlds! Thank you Milk and Eggs for making it so easy with delicious ingredients!

This recipe looks amazing, Yasmin! I love falafel, but always have a tricky time making it at home — I love your idea to first dry-out the mixture before attempting to cook them. Looking forward to trying this at my next Kitchen Table dinner!
