4 Apples
1½ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 cup butter (room temperature)
1 cup light brown sugar (packed)
¼ cup granulated sugar
2 large eggs (room temperature)
2 tsp vanilla
3 cups rolled oats



In a medium bowl, whisk flour, cinnamon, baking soda, and salt.

In a stand mixer, beat butter and sugars on medium until pale and fluffy.

Add eggs and vanilla until completely mixed.

With mixer set to low add flour to mixture, mix until combined.

Add oats and chopped apples, mix lightly.

Preheat oven to 350 degrees and line a baking sheet with foil.

Using a medium cookie scoop, place cookies on baking sheet 2 inches apart.

Bake for 15 mins or until edges are browned, center will be soft and unset.

Cool on baking sheet, then transfer to cooling rack to cool completely.
