Cut the sweet potato in half and roast the sweet potato in the oven for 30 min at 350 degrees. Once done let rest until cool.
Once completely cooled scoop flesh out of the skin and mash in a mixing bowl.
Combine Flap Jack Mix and 1/2 a cup, mix thoroughly. If you prefer your pancakes a bit on the runny lighter, add more water to your liking.
Once your batter is prepared combined with sweet potato and cinnamon, mix thoroughly.
Ladle mix into pan that has been sprayed with coconut oil. Cook until bubbling then flip and cook until lightly golden brown.
Top with maple syrup and a sprinkling of cinnamon if you choose.
