1-Package of Puff Pastry
1-Large zucchini
1-Bunch of Spinach
5ozs- Feta Cheese
1- whole Onion
1-Tbs of Oregano



Defrost puff pastry sheet according to package.

Chop the onto into slices and sauté in olive oil for about 12 min until caramelized. Once onions are caramelized place cheese in pan and allow to melt , once fully incorporated in with the onions mix in oregano . Allow to cool before spreading onto puff pastry sheet.

Using a mandolin slice the zucchini into strips. Once the spread is on the puff pastry layer the zucchini strips on the pastry followed by the spinach leaves. Roll the pastry with zucchini and spinach leave like a jelly roll nice and tight. slice the roll into slices , I got a total of 12 from my roll. Spray with olive oil before placing in oven.Bake at 350 for 30 min or until golden brown around the edges.
