20-Minute Quick & Easy Main Dishes

Do you have a last-minute gathering where you are the host? Or maybe you have an impromptu dinner date at home? Take a look at these quick and easy main dishes that can be put together in just 20 minutes time!


1. Creamy Chicken Quesadillas
This is a unique take on the classic chicken quesadilla. Use a creamy base to mix with the cheese and keep your chicken juicy. If you want a crispier tortilla, coat the filled quesadillas with cooking spray directly rather than coating the pan.


2. Tahini Chicken with Bok Choy and Mango Salad
Tahini and honey together create a nice, charred crust on your grilled chicken thighs in just seconds. The baby bok choy, when sliced, gives the dish a splash of color and adds a nice crunch and nutty flavor. If you are not a fan of mango, sub it out for naval orange sections.


3. Thai Turkey Lettuce Cups
These Thai turkey lettuce cups are not only tasty, but healthy as well! The crispy, fresh butter lettuce helps to balance out the nice flavors of the turkey mixture. If you don't care for butter lettuce, you can always sub it with romaine lettuce.


4. Turmeric Lamb Chops with Crispy Potatoes and Broccoli
These lamb loin chops are a great substitution over ribs or shoulder chops, saving you about 11g of saturated fat per serving! This is definitely a tasty protein and when served with a side of broccoli and potatoes, you've got yourself a five-star main!


5. Shrimp Fried Cauliflower Rice
This recipe not only takes 20 quick minutes to make, but only contains 5 ingredients and will make you look like a star in front of your guests! You'll need sesame oil, peeled and deveined shrimp, eggs, green onions, and riced cauliflower.


6. Black Bean and Mushroom Burgers
You will need a food processor for this plant-based burger patty. Did you know that a plant-based diet can significantly lower your risk of heart disease? Add grounded flax seed to the black bean and mushroom mix to add some body to your burger. Don't forget the avocado spread!


7. Quick Green Chicken Chili
In order to keep this recipe under 20 minutes to make, it will need to be simple, starchy, and creamy! Add some green chilies to the mix to add some heat to your dish. Blend half of the beans and keep the remaining half of the beans whole to give your chili some texture. Pre-cooked chicken works the best with this dish, as it saves time, but this can be substituted with any other leftover protein you may have lying around. Top your chili with sour cream, radishes, diced tomatoes, cilantro, or even some slices of jalapeños! This is best served with a side of tortilla chips.


8. Skillet Red Beans and Rice
This skillet recipe calls for a mix of onion, bell pepper, and celery with your red beans and rice. Toss them all together in the skillet and you've got yourself a nice meal made in less than 20 minutes!


9. Five-Spice Chicken Breasts with Sesame-Orange Beans
With these five spices, your dish will be very aromatic and savory! This is all the spices you will need to season your chicken breasts. If your guests are not a fan of green beans, you can sub that out for broccoli florets or even a side of chopped kale.
